“Fried” Matzoh for a Tasty Passover

To those who celebrate it, Happy Passover! Passover is a wonderful holiday to spend with the family while retelling the stories of ancient Egypt and eating food that you only eat one week out of the year. During this time, Jewish observers are not supposed to eat anything with leavening in it. In other words, any food containing yeast is off limits. Matzoh, which looks similar to a large rectangular cracker, is the alternative for bread during Passover. Although it’s much more rigid than bread, you can do so many things with it. My personal favorite is “fried” matzoh.  It tastes just like French toast, and you don’t have to be Jewish to enjoy it!

All you need is:

–          2 pieces of matzoh  (I like whole wheat bran)

–          2 eggs

–          cinnamon

–          Any toppings that you would usually use for French toast (I always use maple syrup)

Start by wetting your matzoh (run quickly under the faucet to soften it), and then break it into several small pieces in a bowl. Crack your eggs, add as much cinnamon as you like, and mix well.

 

Cook the mixture in a pan on medium heat. Once the egg is cooked, you’re all done.

Eat plain or with syrup or powdered sugar. I promise that you will love it!
