1 sprayCooking Oil Spray
1 1/4 CBrown Rice, long grain
2 3/4 CRotisserie Chicken, cooked, no skin, no bones, chopped
1 CCream of Chicken Soup, condensed, can
1/3 CMayonnaise, light
2/3 CCelery, diced
2/3 CCorn Flakes Cereal
1 2/3 TMargarine

Cook proteins to (internal temp.)…Chicken & Turkey: 165, Ground Meats: 160, Beef: 145, Pork: 145, Fish/Shellfish: 145

Preparation

  1. Preheat the oven to 350 degrees. Lightly coat a baking pan with sides with cooking oil spray.
  2. Prepare the rice (not instant or quick cook) according to package directions. 
  3. Combine all the ingredients, except the corn flakes and margarine, in a mixing bowl. Transfer the mixture to a baking pan.
  4. Pour the corn flakes into a sealable plastic bag and crush into smaller pieces using your hands. Sprinkle the corn flakes to cover the top of the casserole in the baking pan.
  5. Melt the margarine in the microwave oven and drizzle evenly over the top of the corn flakes.
  6. Bake in the preheated oven for 30 minutes.

Wash and pat dry the celery before prep.

Any rotisserie chicken left over makes a great chicken salad sandwich on whole wheat bread for lunch tomorrow.
