Amazingly Easy Warm Spinach and Artichoke Dip

Are you in need of a quick and delicious appetizer for Christmas? I made this spinach and artichoke dip for two different parties in less than a week, and people could not stay away from it both times. It’s not my cooking skills; it’s just a good recipe!

This is a modification of a recipe from food.com. I changed it to make it a healthier, but it doesn’t make it any less yummy!

Ingredients

  • 1.5 cups (this is usually 1 bag) of shredded parmesan cheese
  • 1 10 oz box of frozen spinach, thawed
  • 1 14 oz can of artichoke hearts, drained and chopped
  • 2/3 cup of non-fat Greek yogurt
  • 1 cup reduced-fat cream cheese
  • 1/3 cup low-fat mayo
  • 2 teaspoons garlic, minced

Mix the spinach, chopped artichoke hearts, and parmesan cheese in a bowl. Once mixed well, combine the remaining ingredients and stir well until evenly mixed. Put in an oven-safe dish (you will be serving in this) in the oven at 375 degrees F and bake for about 25 minutes.

This dip is great with tortilla chips or toasted French bread. It’s thick, so serve with a spoon. Enjoy!
