World Vegetarian Day!

Written by RD Monica Joyce: oday is World Vegetarian Day. It was 1977 that this day was founded. It’s was the ’70’s and Vegetarian Diets were very much a part of that era. It is easier than ever to be a Vegetarian with the variety of foods that are available delicious. My favorite and easy to prepare meal is a bowl of pasta topped with zucchini, onion, garlic and fresh tomato. I top it off with parmesan cheese and add a salad.
